From the best plots of the Community of Madrid, the most indicated to make this wine. A special follow-up is carried out on these plots from the end of July to determine the optimal moment of maturation and decide on its harvest date.
These selected grapes are harvested by hand in the coolest hours of the day (sunrise and sunset), and are transported to the warehouse in 20Kg boxes for respect the quality of the fruit as much as possible. Once in the cellar, the fermentation is carried out in deposits of 200 hl. (no more, to control fermentation as much as possible) controlled temperature (22-27º C).
Fermentation and maceration of 13 days with two daily comebacks. For the fermentation of these grapes, the most modern technology and oenological products of the highest quality, always based on the innovations in this wine sector. Once the alcoholic fermentation is finished, the wine undergoes malolactic fermentation, so important in red wines from quality.
Stews, semi-cured cheeses, blue fish and white meats.
